Misal Pav is an iconic Maharashtrian dish that can be served as an anytime meal. A piece of local bread (pav) dunked in a fiery stew made using sprouted beans with a topping of the Indian snack (farsaan) makes for a filling meal. The sprouts stew which forms the bulk of the dish, is also called ‘tari’ or ‘kat’.
The Varieties
Misal Pav is available on the menu in most local eateries in Maharashtra, with different regions having their own versions
- Kolhapuri Misal is the fieriest and does not contain pohe. It is served with thick slices of bread, not pav.
- Puneri Misal varies from spicy to milder taste with more accompaniments or garnishes such as a dry potato curry, chivda (another fried snack) tomatoes, and sometimes even yogurt, along with the regulars like farsaan, onions and coriander.
Recognition
In 2015, the Misal Pav served at Dadar‘s Aaswad restaurant was named the world’s tastiest vegetarian dish at the FoodieHub Awards in London
Recipe
Ingredients
- Sprouted Moth Beans (matki) – 250 grams (Pressure cooked)
- 1 Big Onion chopped
- 1 Big Tomato chopped
- 1 Big boiled potato chopped
- 2 tbsp spoon oil
- 25 – 50 gms MDM Kholapuri Misal Masala
- 2tbsp Sakas Kanda Lasun Masala
- 1.5 liters water
Method
- Heat the oil in a broad non-stick pan, add the onions roast on a medium flame for 2 to 3 minutes.
- Add chopped tomatoes and sauté on a medium flame for 3 to 4 minutes
- Add MDM Kholapuri Misal Masala & 2 tbsp of Kanda Lasun Masala per your taste to the mixture and sauté it for few minutes
- Add water and allow it to boil for few minutes.
- Add cut potatoes, cooked sprouted moth beans (matki) and salt if needed as per your taste.
Serve
- Pour 1/4 of the misal tari in a serving bowl, sprinkle 2 tbsp of Kalyan farsan, 2 tbsp of batata poha (optional), 2 tbsp of onions and 1 tbsp of coriander over it.
- Serve immediately with laddi pavs and lemon wedges.
